I am having a lot of fun trying new recipes and such from the clean-eating book and other self-designed ideas. I love cooking, and I feel good about cooking healthy foods for my family. I recently discovered bulgur. It cooks up kind of like rice, but faster. I am not an expert on it, but I have used it a few times.
I have mixed it into whole wheat pancakes (with flaxseed) and muffins (you have to cook it first). It was delicious in the pancakes!! And it is sooo filling. I think I had one and a half pancakes and I was stuffed. It's wonderful! It was just OK in the muffins. But I think it was the recipe's fault and not the bulgur.
I also made it as a side dish with salmon. I mixed in shredded carrots and diced yellow sweet peppers. I added a little bit of salt and some lemon juice. It was DELICIOUS!! It is a whole grain, so it's really good for you. And, like I said before, it's so filling.
